Preheat oven to 375 degrees.

  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted

Press the mixture against the bottom and sides of the pan to form a crust.

  • 5 cups strawberries, rinshed, hulled and halved.
  • 1 cup sugar
  • 1/2 teaspoon pure vanilla extract

Stir until the sugar dissolves.

Add to saucepan with the strawberries.

Cook, stirring occasionally, until the mixture thickens, 5-6 minutes.

Remove from heat and let cool.

Once cooled, dpore into the pie crust. Cover and refridgerate for at least 6 hours.

Serve with a bit of whipped cream or a small scoop of ice cream.
