Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup peanut butter, almond butter, or cashew butter – I use NuttZo
  • 1 banana, mashed
  • 1/3 cup local honey, agave or real maple syrup
  • pinch salt
  • 1/2 cup ground flax seed
  • 1 cup protein powder – I use chocolate!
  • 2 teaspoons pure vanilla extract
  • 3/4 cup of dried fruit (blueberries, cranberries, or raisins), mini chocolate chips, unsweetened coconut flakes, and/or nuts (cashew, walnut, or pecan)

Instructions

  1. Mix all ingredients until well combined. Mixture should be fairly soft and not dry or crumbly. Add an extra drizzle of honey, if needed.

  2. Press very firmly into an 8x8 inch pan – I line mine with wax paper or parchment to make removal easier.

  3. Refrigerate for at least 1 hour before cutting into bars or squares.

  4. Store bars in the fridge for up to 2 weeks.
