  • 2 1/2 cups cook chicken, a rotisserie chicken will work just fine

In skillet over medium-high heat, saute…

  • 2 tablespoons unsalted butter
  • 1 large white onion, diced
  • 1 garlic clove, crushed and sliced
  • 1 cup okra, sliced
  • 2 cups tomoates (no skins)
  • 1 green pepper, chopped
  • 1 rib celery, chopped
  • 1 bunch snipped parsley

Once onion changes color (starts to become translucent), combine…

  • chicken and rice mixtures
  • 3-4 dashes of hot sauce
  • 1/4 teaspoon ground mace

Place everything in a well buttered ceramic or glass oven dish, cover with the fried breadcrumbs.

Bake in oven until breadcrumbs are nicely brown. Remove and serve.
