Select SAUTE on the Instant Pot.

While waiting for HOT (approximately 8 minutes) to display, generously season all sides of 6-8 point pork roast loin with Moore County Dry Rub) or use your favorite rub for pork.

Once HOT shows, add 1 tablespoon virgin olive oil and brown the pork roast for 6-8 minutes each side.

Place a trivet or rack at the bottom of the instant pot. Place the browned pork roast on top of the trivet.

Add 2-3 cups of water.

PRESSURE COOK on HIGH for 10-12 minutes then carefully manually release pressure.

Once all the steam has escaped, remove water and trivet from Instant Port.

Add 2-3 cups of your favorite BBQ sauce.

Place pork roast directly into sauce. PRESSURE COOK on HIGH for 10 minutes then allow natural release of the pressure.

Remove roast and slice. Serve with sauce from the pot.
