Place in the Instant Pot…

  • 1.5 pounds golden potatoes, washed, cut in 1/4 or 1/2 chunks depending on size
  • 3 cups water, more or less to cover the potatoes

Put on the Instant Pot lid and set it to the sealing position. Set the Instant Pot to PRESSURE COOK and high, setting the time for 5 minutes.

Once finished, do a do a quick release.

Drain the water.

In the pot, toss the potatoes with…

  • 3 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1/4 teaspoon freshly cracked black pepper
  • 1/2 - 1 teaspoons salt
