Select SAUTE on the Instant Pot.
While waiting for HOT (approximately 8 mintues) to display, season all sides of 2-3 pounds chuck roast with salt and fresh cracked black pepper.
Once HOT shows, add 1 tablesppon virgin olive oil and brown the the chuck roast for 10 minutes each side. Remove roast to plate.
Saute for 3-4 mintues…
- 3 white onions, sliced
Add and saute for another 1 minute…
- 6 cloves garlic, minced
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon pinch thyme
- 2 bay leaves
Add and deglaze all the bits off the bottom of the pot with a wooden spoon.
- 1 cup beef stock
Add then stir…
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce (can substitute with soy sauce)
- 1 tablespoon Worcestershire sauce
Place chuck roast into pot and PRESSURE COOK on HIGH for 45 minutes then 25 minute natural release
Once finished, set aside the chuck roast in a mixing bowl and shred the beef with 2 forks. Bring the liquid left in the pot back to boil using SAUTE letting the Aus Jus reduce for 5-10 minutes.
Server on French bread loaves with or without Swiss cheese. Use Aus Jus for dipping.
