Heat oven to 400 degrees.

In a bowl, toss…

  • 3-4 heads garlic (top chopped off)
  • 1/2 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked pepper

Place on a sheet of aluminum foil, making a small pouch, wrap tightly, roast for 1 hour. Open up the top of the pouch, roasting for another 10 minutes.

In a blender or food processor, combine…

  • squeeze the “meat” from garlic-cloves
  • 1/2 cup chopped fresh parsley
  • 3/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper

Use immediately.
