Preheat oven to 350 degrees.

Using baking spray to grease, (or use parchment paper), a 8 1/2 x 4 1/2 inch loaf pan.

In a bowl, whisk…

  • 2 cups almond flour
  • 1/2 cup tapioca flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Using a stand mixer with the whisk attachment, combine…

  • 3 very ripe bananas, about 1 1/2 cups
  • 4 large eggs
  • 2 tablespoons cococut oil, melted and cooled to room temperature
  • 1 tablespoon lemon juice
  • 2 teaspoons pure vanilla extract

Slowy add in the flour mixture about a 1/4 cup (or less) at a time.

Fold in…

  • 3/4 to 1 cup of raisins

Transfer batter to the prepare loaf pan and bake for 50-60 minutes, or until deep brown and a toothpick (or table knife) inserted into the center comes out clean.

Remove from oven and allow to cool completey in the pan on a wire rackbefore removing loaf.
