Prepare 2 frozen pie crusts or make your own: (Pie Crust)[/recipes/pie-crust/]

Cut up and place pieces in 6-quart stockpot.

  • 3 1/2 lbs. chicken

Add…

  • 1 medum white onion, sliced ( put aside 1/4 cup for later in the recipe )
  • 1 celery stalk, chopped
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 3 cups water

Bring to boil. Reduce heat and cover, simmer until chicken is tender.

Strain, saving broth. Bone the chicken and cut it into bite-size pieces.

Cook…

  • 1/4 cup white onion (previously set aside)
  • 1/2 cup mushrooms, sliced
  • 1/4 cup unsalted butter

Stir in…

  • Dash of nutmeg
  • Dash of pepper
  • 3 tablespoons all-purpose flour

Remove from heat and mix in 1 1/2 cups of saved chicken broth. Return to heat and stir until thickened.

Add…

  • chicken pieces
  • 1/2 cup peas (fresh or frozen)

Heat oven to 425 degrees.

Spread mixture into prepared pie crust. Put pie crust on top, trim and pinch edges. Cut slits on top.

Beat an egg white with 1 teaspoon water and brush on top of pie crust.

Bake for about 25 minutes. Allow to cool slightly before serving.
