Preheat oven to 350 degrees.

Prepare 2 cups cooked chicken from leftovers, canned, rotisserie, etc.

Cook as directed on package…

  • 8 ounce package egg noodles, broad style

In large skillet, over medium heat, melt 1/2 cup unsalted butter then cook until lightly brown…

  • 8 ounces mushrooms, sliced

Stir in…

  • 1/3 cup all-purpose flour

Once the mixture is stirred completely, add the following whisking until thickened…

  • 1 cup milk
  • 2 cups chicken broth (stock works just fine)
  • generous pinch of rubbed sage
  • salt and fresh cracked pepper to taste

Combine…

  • cooked chicken
  • cooked egg noodles
  • sauce

Once combined, adjust salt and pepper to taste. Place mixture in 2 quart casserole dish. Sprinkle the top with 1/3 cup freshly grated Parmesan cheese

Bake for 30 minutes.
