In a bowl, place…

  • 4 eggs, beaten

On a plate, place…

  • 2 cups bread crumbs (any kind work, but I like panko)

Dip into beaten eggs, then into bread crumbs; do this twice…

  • 4 pork chops, each 1-inch thick, that have been sprinkled with a bit of salt and freshly cracked pepper

This is important! Preheat broiler – low heat. Place chops on a lightly greased (olive oil) brolwer pan 7-10 inches from the source of heat.

Broil slowly (this means low heat) for 10 minutes.

To make the basting sauce, mix together…

  • 6 tablespoons unsalted butter, melted
  • 4 tablespoons olive oil
  • juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons prepared mustard
  • 1 garlic clove, split (it will be removed later)
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon crushed red pepper flakes (or a couple of dashs of your favorite hot sauce)

Once well blended, discard the garlic.

Spoon half of the sauce over the chops. Continue slowly cook the jobs for 15-20 minutes longer.

Turn chops over and spoon the remaining sauce over them. Cook for about 25-30 minutes more. Check for doneness.

The original recipe said to serve with spaghettiini with marinara sauce, but I like fresh vegatables such as some simply roasted carrots.
