Preheat oven to 375 degrees

In saucepan, combine over medium heat…

  • 4 cups fresh blueberries, rinsed in cold water
  • 1/2 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon grated (or ground) nutmeg

Cook, strirring for 7-8 minutes, or until the juice begins to form a syrup.

Dissolve then add to saucepan…

  • 1 tablespoon cornstarch
  • 1 tablespoon cold water

Stir until it slightly thickens, 2-3 minutes.

Remove from heat and let cool.

Line a 9-inch pie pan with pie crust.

Pour the blueberry mixture into the curst.

Place the top crust over the filling and crimp the edges together.

Brush the crust with…

  • 1 egg, beaten

With a pointed knife, make 3-4 small slashes in the center of the crust.

Place pie on a baking/cookie sheet and bake for about 45 minutes or until crust is golden. Let cool for 15-20 minutes.

Top with ice cream when serving.
