Preheat oven to 350 degrees.

In a medium bowl, sift together…

  • 2 1/2 cups all-pupose flour
  • 1/4 cup sugar
  • 1 1/2 tablespoons baking powder
  • 1/4 teaspoon salt

Using your hands, or a pastry blender, work in…

  • 1/4 pound (1 stick) plus 2 tablespoons unsalted butter (softened)

Mixture should resemble a coarse cornmeal, making sure no lumps are left.

Slowly stir in…

  • 1 cup milk

Mix just until the dry ingredients are moist. Do not overbeat.

Spoon batter into 12 greased muffin cups. And bake 35-40 minutes, or until golden brown. The muffins should have a thick crust with a cake center.
